The baker.

Hi, I'm Nicci Russell and I founded Baked in Breck in 2021, shortly after relocating to the Colorado mountains. I'm originally from East Lansing, Michigan, where I earned a degree in neuroscience in 2017. I had intended to go to medical school but eventually realized it wasn't the right fit for me. I left my job in research to live my dreams in the mountains.

To me, baking is a form of expression. It allows me to convey love, kindness, and warmth through each and every creation. It is a means of crafting everlasting memories for those who indulge in my treats. This is the invaluable lesson that my grandmother showed me, and I am forever grateful for the opportunity to carry on her legacy and create these magical experiences for others.

So, as you place an order, I invite you to indulge in not just the delectable flavors but also in the love and passion that goes into each and every creation. Allow Baked in Breck to transport you to a place where happiness is baked into every bite, and where the spirit of my amazing grandmother continues to inspire the sweetest journey of all.

Baked in Breck: A Sweet Journey Inspired by Love

When I made the decision to move out to the mountains, my mind was focused solely on finding happiness and letting the rest fall into place. Starting a business was the last thing on my mind. However, as the months rolled by and I immersed myself in the beauty of mountain living, a seed of an idea started to take root within me.

I wanted to create something that would not only bring me joy, but also touch the lives of others. And so, the concept of Baked in Breck was born. I envisioned a bakery that would offer more than just delicious treats; it would provide an experience that would resonate with people on a deeper level.

Luckily, inspiration was never far away. Growing up, I was incredibly fortunate to have spent a great deal of time with my amazing Grandmother. She was a phenomenal baker, and she passed down her knowledge and love for the craft to me. She was, and continues to be, my heavenly motivation and guardian angel.

  • No, not yet! All orders are custom, meaning created specifically for an order. I do not have a stock of cupcakes available at any given time. Customer orders are available for pick up at my kitchen: 166 Argentine court in Keystone.

  • Gluten-free: yes! just know all desserts are made in the same kitchen where processing of gluten-containing desserts occurs. There is a possibility of cross-contamination, but we do store all of our gluten-free ingredients and supplies separate and spend extra attention to avoid this.

    Dairy-free: no :(

    Vegan: no :(

Stay tuned as I fine tune my recipes for DF and Vegan cakes.
